SDGE - INNOVATIVE FOOD SERVICE TECHNOLOGIES & EFFICIENCIES

Course Description:

Food service equipment has been evolving over the last decade: showing increases in energy and water efficiency as well as performance. This seminar will discuss the upgrades, redesigns, and new technologies that are behind the advances in cooking, refrigeration, sanitation and ventilation equipment. Attendees will learn how to find and specify the most efficient, high-performance equipment and be introduced to the incentives and economic benefits these innovative technologies can bring to a food service operation.


About the Speaker:

David Zabrowski, senior engineer, Fisher-Nickel, inc. heads up the appliance testing and evaluation program at PG&E s Food Service Technology Center in San Ramon, CA. He has a comprehensive understanding of food service operations along with experience in field instrumentation and measurement.

 

He has been instrumental in developing over 30 test methods for commercial food service equipment, which have been ratified by the ASTM as official standards. David has been involved in the testing of over 100 different appliances and co-authored well over 60 published technical reports.

 

He currently sits on the NAFEM Committee on Life Cycle with respect to developing a life cycle cost model for commercial cooking appliances. David has a Bachelor of Science Degree in Electrical Engineering from Cal Poly in San Luis Obispo.
